great vid. great technique. we do a similar recipe to this on the grill. we are also fortunate to live near a Polish American meat delis that sells fresh kielbasa. life is good! -BBQ Pit Boys

I did this same recipe but with Boar’s Head Bratwurst instead of Kielbasa and it was just as good as this recipe.. Thanks

Well it is sour tasting.. If its old and sitting around in the store you can have a bad exp too.
Its really tasty in this dish.

Im Indian , so i have only a afaint idea European cuisine. But im greatly interested to try more stuff.:)
I mix it all in Sausages, onions and potatoes.
BTW I love Indian food. The spices are super.

Sauerkraut can be an “aquired” taste…especially if you grew up in a culture where “pickled cabbage” is not common. With that said, the stuff comes in a variety of preperations, canned, packed in plastic, etc. If you have a German Deli nearby, ask for recommendations for a mild kraut, that is not too acidic. One brand that they usually carry that comes from Germany is called “Hengstenberg” Mildessa Sauerkraut and is preserved with white wine…which makes it milder in flavor…keep trying!

Taste of sauerkraut all depends on the type. Most cheaper versions found in stores are only shredded and lightly cooked cabbage with vinegar and salt dumped in. This can be VERY sour due to the vinegar. The sauerkraut we (my family) makes is true fermented sauerkraut, and we ferment for 4 – 5 weeks. No one who has bought ours ever complained about it being overly sour. It’s all in how it’s made. Longer fermentation is softer and less sour. Shorter is crunchy and more sour.

definately going to try this, We usually cook it in a saucpan, If anyone finds the kraut to sour, try making it yourself. It is super easy you can control the length of fermentation to get a level of sour and acidity that is to your liking. Pete , is that a stout?
